This month is Monty and Fi Chai’s birthday. Monty is turning two and Fi Chai is turning 9. Since I have a jar of applesauce sitting in my pantry for a while, I decided to make Darla’s Apple Spice Pupcakes as presents for the two birthday doggies.
The only modification I made to the recipe is that I used all brown rice flour instead of 3/4 cup of oat flour and 3/4 cup of brown rice flour. I also filled the mini cupcake tin very full because I know these won’t rise and since I won’t be frosting the pupcakes, I want to give it a dome shaped top. The pupcakes turned out great. I didn’t taste test them this time but they smelled delicious! Actually, they smelled just like the Spiced Applesauce Cupcakes that I made for human consumption (the bigger cupcake in the photo above)!
